Anne’s Delicious Corn Bread

I never tasted cornbread until I moved from NYC to Kentucky. I quickly learned you don't have to be from the South to love your cornbread. It's a great bread choice for all fish, meats, and chili --- and it's so quick and easy to make! This recipe makes 16 squares and freezes well.

Anne’s Delicious Corn Bread

Makes 16 squares

Ingredients:

  • 1 cup flour

  • 3/4 cup corn meal* (*Or use1/2 box (8.05 oz) of Jiffy corn muffin mix and freeze the other half until needed again. This is what I do!)

  • 3 tablespoons sugar

  • 2 1/2 teaspoons baking powder

  • 3/4 teaspoons salt

  • 2 eggs, beaten

  • 1 cup milk

  • 1/4 cup cooking oil or melted butter

  • (1 tablespoon melted butter for greasing 8" square metal pan)

Instructions:

Preheat oven to 350 degrees
Combine all dry ingredients.
Stir in egg, milk, and oil or butter.
Pour into greased pan and bake for 35-40 minutes.
