Chicken & Stuffing Casserole

Who doesn't love easy, affordable, and delicious meals? The Chicken & Stuffing Casserole is one of those meals that I remember eating a lot as a child. Favorite childhood meals instantly become comfort food.

I'm a big fan of holiday meals and particularly love sides. For me, the holiday sides such as mashed potatoes, green bean casserole, and stuffing make the meal. You can make a recipe like this one any time of the year. There are several versions of this recipe; I encourage you to make adjustments to the recipe. Casseroles have the freedom to be whatever you want them to be. Such as adding vegetable mix (diced corn, peas, carrots), or use two packages of stuffing mix instead of one, just to name a few recipe modifications.  

If you typically make homemade stuffing (aka ‘dressing’ if you're from the southern states), don't worry about the packaged stuffing mix.

Chicken & Stuffing Casserole

Makes 4-6 servings | Prep Time: 20 mins | Cook Time: 30 mins

Ingredients:

  • ●      1 pkg. (6 oz.) savory or chicken flavor Stuffing Mix

    ●      4 boneless skinless chicken breasts

    ●      1 can (10 ¾ oz.) condensed cream of mushroom soup

    ●      1/3 cup of sour cream

    ●      3 tablespoons of milk (optional)

Instructions:

Bring water to boil and add the chicken breast. Boil until the chicken is almost cooked through.

  1. Let the chicken cool. Then, cut into small (or desired size) pieces. (I use a food processor.)

  2. Mix contents of stuffing mix pouch and 1 ⅔ cups water, set aside.

  3. Mix the soup, sour cream, and milk into a bowl. Add the diced or shredded chicken, salt, and pepper.

  4. Place the chicken mixture in a 13x9-inch baking dish or 2-quart casserole dish. Top with stuffing.

  5. Bake at 375°F for 30 minutes or until the stuffing is golden brown. Enjoy!

 I recommend adding a small garden side or vegetable of your choice.
