Curried Sweet Potato Latkes

I just came back from a Hanukkah party with regular latkes but I didn’t eat them because regular latkes are too starchy and greasy. The sweet potato recipe is less greasy because you fry at high heat in peanut oil. Still greasy but much tastier. I just use cumin, one of the spices in curry powder, so I guess that is what gives it the name “curried.”  I got the recipe from the St. Louis Post Dispatch a long, long time ago.

CURRIED SWEET POTATO LATKES

Ingredients:

  • 1 pound sweet potatoes, grated

  • 1/2 cup flour

  • 2 teaspoons sugar

  • 1 teaspoon brown sugar

  • 1 teaspoon baking powder

  • 1 teaspoon ground cumin

  • fresh ginger, grated

  • 2 eggs

  • 1/4 cup milk

Instructions:

Mix dry ingredients in a bowl and add the grated ginger.

Add eggs and milk to dry mix.

Mix the sweet potatoes into the rest. It should be moist but not runny.

Fry in peanut oil.
