French Strawberry Cake

It's Strawberry Picking time and this recipe posted on Allrecipes online caught my attention. It is Delicious and very easy to make and already a family favorite.

FRENCH STRAWBERRY CAKE

Adapted from Allrecipes
Preparation Time: 20 minutes
No. of Serv ings: 8
Cooking Time: 50 minutes

Ingredients:

  • Cooking Spray

  • 1 and 1/8 cup white sugar, divided

  • 1 stick unsalted butter, room temperature

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 1 and 1/3 cup all-purpose flour

  • 1 and 1/4 teaspoon baking powder

  • 1/4 teaspoon salt

  • 1/2 cup sour cream

  • 10 or 12 Large fresh strawberries; stemmed and halved (if using small strawberries, double amount of strawberries)

Instructions:

Preheat oven to 350 degrees.

Spray or grease 8" gound pan

Whip together 1 cup sugar and butter until pale and fluffy (5 minutes).

Add eggs one at a time, beating well after each addition. Beat in vanilla.

Whisk together flour, baking powder, and salt in a medium bowl. Add flour mixture to butter mixture, alternating with sour cream. [Note: If using small strawberries, fold in at this point. If using Large strawberries that have been halved, wait to press them into the batter.]

Spread batter into pan. Place large, halved strawberry pieces in ring around pan and fill in to cover entire top. Then press strawberries down. Sprinkle evening over top with remaining sugar.

Bake for 45-50 minutes until cake tester comes out clean. Cool on rack before turning out. [Note: As batter rises, it might look like it will spill over, but it won't. It just makes a lovely ring]
