Robin’s Fried Squash Blossoms

In the heat of summer I love to buy squash blossoms at the farmers market and fry them as a delicious side dish or appetizer. Super simple, quite a treat.

FRIED SQUASH BLOSSOMS

Makes 4 servings

Ingredients:

  • 8 squash blossoms

  • Pablo bread crumbs

  • Flour

  • 1 egg

  • 1/4 cup milk

  • Butter

  • Olive oil

  • Salt and pepper

  • Fresh or dried thyme

Instructions:

Make sure squash blossoms are clean and patted dry. In a shallow bowl mix and fork whisk egg and milk, some salt and pepper and thyme. In a separate shallow bowl mix together Panko, flour, plenty of salt and pepper and thyme to taste. Having seasoning in dry and wet ingredients helps distribute more flavor.

Heat butter and oil in large frying pan over medium.

Dredge blossoms one at a time and milk mixture. Then dredge thoroughly into flour and crumb mixture. Fry until golden brown, then turn over and fry until golden brown. Drain on paper towels. Served hot or room temperature.
