Gluten-Free Peach Cobbler

We were invited to a dinner party with friends and much to our surprise our hosts made a gluten free peach cobbler for Gary. Every time since, when we serve this Peach Cobbler, it is a big hit for those who can and cannot eat gluten. It is now our all-time favorite dessert!

GLUTEN-FREE PEACH COBBLER

Makes 8-12 servings

Ingredients 

  • 8 ripe peaches, sliced. If organic, no need to peel.

  • ½ cup white sugar

  • ½ cup brown sugar

  • 2 tsp cinnamon

  • 1 tsp nutmeg

  • 1 stick of butter, melted

  • 1 cup Bob's Red Mill Gluten Free All-Purpose Baking Flour

  • 1 cup white sugar

  • 2 tsp baking powder

  • ¼ tsp salt

  • ½ cup milk, room temperature

  • 1 egg, slightly beaten and added to the milk

Instructions:

Preheat oven to 350 degrees F.

Slice peaches and place in a bowl along with white sugar, brown sugar, cinnamon and nutmeg. Stir in peaches and let sit.

Melt butter in a 9x13 baking dish.

Mix Gluten free flour, white sugar, baking powder, and salt. Stir milk and egg together and incorporate into Gluten free flour mixture.

Pour over melted butter in baking dish. Pour peaches over flour mixture.

Bake for 35 minutes or until top is golden brown, if fresh peaches. 45 minutes for frozen peaches.

Serve warm with ice cream or dairy-free alternative.
