Mango Lassi Popsicles

We love popsicles, especially in the summer when it’s hot...but we could eat popsicles all year long, even when it’s snowing outside. Our mom and dad buy yummy fruit popsicles from the store, Simone loves the tangerine ones and Sofia’s favorite are strawberry, but we’d really eat any popsicle we could get (except maybe broccoli ones).

Even better is when we get to make our own popsicles at home! Last summer our dad taught us how to make mango lassi popsicles. Mango lassi is a mango-flavored yogurt drink that comes from India and is one of our dad’s favorite drinks. We love these popsicles because they’re easy to make, healthy, colorful and so, so delicious. We hope you like them as much as we do!

Mango Lassi Popsicles

Ingredients:

  • 3 cups mango (fresh or frozen)

  • 1 cup yogurt (we use plain, low-fat Greek yogurt)

  • 1 Tablespoon honey (adjust as desired)

  • 1/8 teaspoon ground cardamom (optional/adjust as desired)



Instructions:

1. Add all ingredients to a blender, blend until smooth. May add additional yogurt, water, and/or milk to thin out the blend as necessary.

2. Pour into popsicle molds, freeze for 4/5 hrs.

*to make dairy-free/vegan we have also used non-dairy yogurt
