Mixed Green Salad

MIXED GREEN SALAD
BLACKBERRY VINEGAR DRESSING

Salad:

  • 10 oz baby spinach/ baby kale, field greens

  • 1 cup fresh blueberries/dried cranberries/pitted  chopped dates/dried cherries

  • 4 oz. crumbled blue cheese/goat/feta

  • ½ cup toasted or candied chopped pecans/walnuts, black walnuts/slivered almonds

  • Sliced fresh mushrooms dipped in lemon juice

Dressing:

  • ¼ cup blackberry vinegar/raspberry vinegar/balsamic vinegar 

  • 1 TBL sugar

  • 2 tsp prepared Dijon mustard

  • ½ tsp salt

  • ½ cup extra virgin olive oil/canola oil

Variations:

Depending on the season or crowd, I change this salad up to make it healthy. I also use flavored syrup and no sugar when I can’t get flavored vinegar.

Cheese is a must to make this salad tasty, but I like to ask in case people don’t like goat or blue cheese. I also sometimes add sliced avocado dipped in lemon juice to the healthy salad.

When I can’t find tripled-washed spinach or kale, I make my own fruit salad wash which I let stand for 5 or more minutes.

Mix the liquid together and put the baking soda directly on the fruit or vegetables. Then pour the liquid over. Rinse well after 5 to 10 minutes.

Fruit Salad Wash

  • 1 cup cold water

  • 1 cup white vinegar

  • ½ squeezed lemon

  • 1TBL baking soda
