Molasses Sugar Cookies

My Food Story:

Sometimes a friend knows just what you need. My days during the Covid-19 sheltering order are easier than most people's, as I already stayed home a lot, and I get to go on walks with my friends. Still, the difficulty I know others are suffering takes a toll on one's spirits. On one of the days I was feeling the most worry and sadness I got a gentle ping on my phone. It was a text from my friend Cynthia saying she had just delivered some homemade molasses cookies to my porch. Voila. Love felt, spirits lifted, need met. And knowing how much it meant to me l quickly procured the recipe so I could pass it forward, as they say. Enjoy these cookies and make enough to share.

Molasses Sugar Cookies

(Makes 36 cookies)

Ingredients 

  • 3/4 cup vegetable or canola oil

  • 1 cup sugar

  • 1/4 cup unsulfured molasses (or sorghum or cane syrup)

  • 2 egg whites

  • 2 cups flour

  • 2 teaspoons baking soda

  • 1 teaspoon cinnamon

  • 1/2 teaspoon ginger

  • 1/2 teaspoon allspice

  • 1/2 teaspoon salt

  • dash cayenne (optional)

Instructions:

Beat together first four ingredients until smooth. Add dry ingredients and mix well. Make 1-inch balls. Roll in granulated sugar and press with the bottom of a glass gently until 1/3" to 1/2" thick. Bake at 350 degrees for 8-10 minutes. Remove, cool and serve.
