Chinese-Russian Soup

You just gotta' love hot, healthy soups but never more so than when you are in the middle of a snowstorm during the COVID pandemic. This Chinese-Russian soup fills the bill!

CHINESE-RUSSIAN SOUP

Adapted from the Myers&Chang At Home cookbook

Serves 4

Ingredients:

  • 2 tablespoon oil

  • 1/2-pound ground pork

  • 6 green onions, chopped

  • 1 tablespoon chopped fresh ginger

  • 1 tablespoon minced garlic clove

  • 2 cans Campbell's Chicken Broth

  • 2 cans water

  • 8 ounces firm tofu, cubed

  • 1 very large shitake mushroom (thinly sliced)

  • 1/2 cup rice vinegar (or white)

  • 3 tablespoons sesame oil

  • 2 teaspoons sugar

  • 2 teaspoons Sriracha, or to taste

  • 1 teaspoon white pepper

Instructions:

Heat oil, add sausage, onions, garlic, ginger, and sauté for 1 minute. Add chicken broth. Bring to boil, then simmer. Add everything else and heat it up. Serve.
